Ingredients

  • 1/2 lb cod fish without bones
  • 1/2 tsp salt
  • 1 tbsp butter
  • 1/4 tsp blak pepper
  • 3 whole eggs
  • 2 egg yolks
  • 2 cups vegetable oil
  • 2 lb potatoes
  • 1 medium onion finely chopped
  • 1-1/2 cups of breadcrumbs
  • 1/4 cup chopped parsley

Preparation

Soak the cod in water for 2 or 3 hours. Boil the potatoes until they are soft and mash them. Sauté the onion in the butter. Add into the mashed potatoes the salt, pepper, 2 egg yolks, parsley, the cod shredded. Mix it all up well and start making 1x2 inch roundish fritters. Beat the 3 eggs in a shallow bowl and spread the breadcrumbs in a flat plate. Roll each fritter twice in the breadcrumbs and the egg and fry in the hot vegetable oil until golden brown. This amount will yield about 20 fritters.
