• 1 lb large white beans
  • 1 mini pork knuckle
  • 1 lb cooking ham
  • 1 blood sausage
  • 1 spanish chorizo
  • 2 large potatoes in cubes
  • 1 large onion
  • 2 garlic cloves
  • 1/4 cup olive oil
  • 6 cups water


Soak the beans overnight in salted water. When ready to cook, start a Sofrito heating up the olive oil and adding the chopped onion and the garlic cloves, smashed. Cook until the onion is slightly burnt. Wash the beans well to get rid of the salt and put them in the pressure cooker with all the other ingredients, the Sofrito and 6 cups of water. Cook for about 40 mins.
