Ingredients

  • 1 roasted red and one yellow or green bell pepper
  • 2 lb chicken (breast - cut into 2 inch strips)
  • 1 lb sausage
  • 5 medium size zucchini (cut into match sticks)
  • 1 and a half cup chicken broth
  • big fist of parsley (chopped)
  • olive oil to cook with
  • cayenne pepper (optional)
  • salt & pepper
  • flower

Preparation

In large pan brown the zucchini - set aside. Cook the sausage and when done cut into quarter inch wheels - set aside and don’t eat too many while cooking. Dredge the chicken strips in the flour and fry in batches - set aside. Put all the ingredients into the pan now, add the broth and stir - use two wooden spoons - sprinkle the cayenne.. Cover and let get hot, stir before serving, add the parsley and stir in.
