• 2b 1/2 cups cooked chicken (it can be from a soup, or a roast chicken)
  • 2 Tbs unsalted butter
  • 1 tsp diced onion
  • 6 Tbs flour
  • 1 tsp salt
  • 1 cup breadcrumbs
  • 2 eggs
  • 1 cup whole milk
  • 1 Tbs dry white wine
  • 1/8 tsp nutmeg


Melt the butter and sautee the onions, add the milk, flour, salt, nutmeg, and pepper and continue cooking over medium heat, stirring constantly with a wooden spoon until thick. On low heat, add the wine and the ground chicken. Let it rest for 30 mins and refrigerate for two hours before making the croquettes.

To make the croquettes, beat the 3 eggs in a bowl and spread the breadcrumbs on a flat plate. Using a tablespoon, get the chicken mixture and dip in eggs and dust with breadcrumbs using your hands to make the croquette shape.

Fry in hot oil until golden brown.
