Ingredients:

  • 1/4 cup olive oil
  • 1 medium onion, diced
  • Salt
  • 2 garlic cloves, minced.
  • 1/2 cup tomato sauce
  • dash of cumin
  • 1 dash red pepper
  • 1 lb red kidney beans (Goya are the best)
  • 6 cups water
  • 1 spanish chorizp
  • 1 bacon elbow
  • 1/2 lb ham
  • 1 bay leaf
  • 2 potatoes, cut in medium chunks

Preparation

Soak the beans in water over night.
Use a pressure cooker set at 30 mins to cook the beans, the ham, and the bacon elbow. Make a “Sofrito” with the first 7 ingredients. Open the pressure cooker when safe, and add the sofrito, the chorizo and the potatoes. Leave in a low heat for another 20-25 mins or until the potatoes are tender.
