Ingredients:
- 1 lb black beans
- 1 large bell pepper
- 10 cups water
- 2/3 cups olive oil
- 1 large onion, diced.
- 4 garlic cloves
- 1 large bell pepper
- 4 tsp. Salt
- 1/2 black pepper
- 1/4 teaspoon oregano
- 1/4 tsp cumin'
- 1 bay leaf
- 2 Tbs. white cane sugar
- 2 Tbs. vinegar
- 2 Tbs. dry white wine
- 2 Tbs. olive oil
Preparation
Soak the beans overnight with 1 bell pepper.
Cook in the same water for about 45 minutes, if using a pressure cooker, cook for approx 30 minutes. In a hot pan, heat the oil and sauté the onion, garlic, and bell pepper (diced) Add the "sofrito" to the beans, plus the oregano, cumin, salt, bay leaf, and sugar. Let it simmer for half hour, add the wine and vinegar, cover another half an hour, or until it has thicken. Check the salt. When about to serve, add 2 Tbs. olive oil.
