Ingredients:
- 1 medium onion, diced
- 2 garlic cloves, minced
- 1/4 cup olive oil
- 1/2 tomato sauce
- 2 pieces of green bell pepper
- 1 piece of cabbage (optional)
- 1 lb garbanzo beans
- 2 spanish chorizo
- 1 lb flank steak
- 1/2 lb ham
- 2 potatoes, cut in chunks
- 1 chunk of pumkin
Preparation
Use a pressure cooker set at 40 mins to cook garbanzos adding the flank steak, the ham, and the cabbage. Make a sofrito with the first 5 ingredients. When the pressure is gone, carefully open the cooker and add the potatoes and the pumpkin. Leave on low heat until it thickens, about 30 mins. You can use the leftover meat from this recipe to make croquettes or Vaca Frita.
