Ingredients:

  • 3 lbs Pork Loin
  • 1 onion
  • 1 green bell pepper
  • 2 garlic cloves
  • 1/4 tsp black pepper
  • Salt
  • 1 sour orange
  • 6 (or more, if you'd like) pitted prunes
  • 1/2 dry white wine
  • 4 oranges
  • Olive oil
  • Garlic powder, to taste.

Preparation

Use a fork to poke holes all over the pork. Use a knife to make openings around the pork to insert the pitted prunes.

Make a "mojo" with the garlic, salt & pepper, and the sour orange. Marinade the pork with this "mojo" and refrigerate for 3 hours, or overnight, .Heat the oil in a deep pan and roast the pork, without the mojo, all over. Add a bit of garlic powder on top of pork adding the wine and the juice of two oranges. Cook on low heat until tender. If you see that the juices are drying up before the meat is fully tender, you may add the juice of the two remaining oranges.
