• 2 cups whole milk
  • 1 cinnamon stick
  • 1 piece of lime peel
  • 2 Tbsp corn starch
  • 1/2 tsp vanilla extract
  • 2 Tbsp milk at room temperature.
  • 3 egg yolks
  • Sugar to taste
  • Pinch of salt


Heat the milk the milk, the cinnamon stick and the lime peel together in a saucepan over medium heat until simmering. Let it rest for about 10 mins. Add the corn starch. Beat the eggs with the room temperature milk ,pinch of salt, and return to the stove, adding the sugar and stirring constantly until thick. Away from the heat, add the vanilla and pour in small ramekins. Before serving you may decorate with cinnamon.
