• 1 2lb chicken
  • 1 lemon
  • 1 medium onion, sliced.
  • 4 garlic cloves
  • 1 bay leaf
  • dash of oregano
  • Salt
  • Pepper
  • 1/4 cup dry white wine
  • Olive oil


Season the chicken with the juice of one lemon, the oregano, and the garlic cloves. In a pan, heat the oil and sear the chicken on all sides until nicely browned. Add salt and pepper to the seared chicken, the onions and the wine. When it starts boiling, put it in low heat until the chicken is cooked, about 20 mins. Increase the heat to medium -high and cook for another 10 mins.
