• 1 lb white beans
  • 1 pig elbow
  • 1 lb country rib
  • 1 lb ham
  • 1 tsp. Powdered pimento (pimeton)
  • 1 medium onion, diced
  • 6-8 grape tomatoes
  • 2 slices of green bell pepper
  • 2 garlic cloves, minced
  • 1 bay leaf
  • Pinch of cumin
  • 1/4 cup olive oil
  • Salt


Cover the beans with water, add all meats and the bay leaf and cook in a pressure cooker for 30 mins. Make a sofrito with the olive oil, onion, tomatoes, pepper, garlic, salt and cumin. Once the pressure of the pot is gone, open the lid carefully and add the sofrito to the bean soup. Cook on a low heat for another 15 minutes. You may add potatoes, pumpkin, or carrots. Check the salt and make sure vegetables are soft.
